How many types of eggs are there?
What is their average weight?
As per USDA guidelines, eggs are graded as AA, A and B. AA eggs are near perfect with thick & firm whites, A eggs are similar to AA with whites being less thick, and B eggs may have slight stains and are irregular in shape & size.
As per size, the eggs are classified as -
Small - 42.5 gm
Medium - 49.6 gm
Large - 56.7 gm
Extra large - 63.8 gm
Jumbo - 70.9 gm
Why are blood spots seen in the freshly laid eggs sometimes?
Can those eggs be eaten?
Blood spots are seen due to rupture of a blood vessel on the yolk surface during formation of the egg. Such an egg is safe to eat. If required, the spot can be removed with a knife before eating.
Why are hairline cracks seen sometimes on freshly laid eggs?
Why are eggs laid with easily breakable weak shells?
Cracks and other damages are usually seen in eggs with weak shells. Some reasons for this are - aging, poor nutrition, saline water consumption, high temperature, diseases like infectious bronchitis, infrequent egg collection, rough handling, etc. They can be eaten, but their hatchability is reduced.

Store eggs in a cool, dry place for 4-5 days, and refrigerate them after that.
Standard shelf life of eggs is 3 weeks under cool conditions. the tempereture outside plays an important role in the cooling of the eggs.
Double yolk eggs
Sometimes, some eggs are formed with 2 yolks. This is uncommon and is found in eggs produced by young pullets and old hens nearing the end of their egg production cycle. It is caused due to release of 2 yolks at a time into one egg during production of the egg. It is perfectly safe to eat, and is considered lucky by many communities across the world.

Unfertilsied eggs are that formed without mating with the rooster, fertilised eggs are that caused due to mating ,, fertilised eggs are required for hatching
Cause for tiny eggs without yolk`
Sometimes very small eggs without a yolk are laid. These are normal, and usually laid by a pullet who has just begun laying eggs. As its reproductive cycle has just started functioning, it sometimes lays eggs without forming or releasing any yolk into it. These eggs are called fairy eggs in some parts of the world, and can be eaten.

Place the egg in a bowl of water. If the egg lays on its side at the bottom, it is fresh. If the egg stands upright on the bottom, it is still fine to eat, but should be eaten very soon, orhard-boiled. If the egg floats to the top, it's past its prime, and not good for eating.

There is no proven nutritional difference between different coloured eggs.
The difference in colour in the egg shells is due to deposition of pigment during the process of egg shell formation. This phenomenon is seen usually in country chicken breeds.
